Award Winner Chef Victor Takes You on a
Gastronomic Tour de France at Bistro Bisou.
 
 A brand new taste of France just moved into the South Miami/Pinecrest area.  As new management and a new Chef are taking over Bistro Bisou, menus and wine lists are being revamped to reflect authentic French cuisine as you would get right off the streets of Paris.
 
Chef Victor received his training from some of the best European chefs, such as Paul Bocuse, Alain Ducasse, George Blanc, Edward Merard and others.  He completed many internships in world known kitchens such as La Tour d’Argent, in the Eiffel Tower, Le Café De Paris at the Monte Carlo Hotel in Monaco and the Ritz Carton Hotel and famous Queen Elizabeth Hotel in Montreal. 
By bringing his talent to Bistro Bisou, Chef Victor offers French classics with the amazing flavors you would expect from France.  Try the steak tartar or the sweet bread in mushroom port cream sauce and your taste buds will approach ecstasy.  Everything from rabbit to duck, from mussels to foie gras is cooked to perfection – rich, flavorful and satisfying.
 
Chef Victor’s specialty as an apprentice was as a Chef Saucier.  “Sauces are the foundation of French Cuisine.  They are key to achieve unsurpassed flavors.  The challenge is to make sure they are not too heavy.”  Chef Victor has spent his career perfecting his sauces.  Combine this talent with the freshness of all his ingredients and you find food comparable to what you now see from the best Chefs on television.  Finding the right staff is also very important.  “I’m Lucky” said Chef Victor “I found a real professional in Chef Jacky Kapala.”  Originally from Strasbourg, France Chef Kapala started his career at age 14.  He did his internship at the 3 Michelin Star l’Auberge de Lille in Alcace and then moved to the world renown Negroni Restaurant in Nice.  After traveling for a few years, he established himself in Miami where he became Chef at the célèbre French Restaurant Le Festival.  “It is a real pleasure to count him as one of our staff.”
 
So, whether you are a food connoisseur or you just enjoy good cuisine, the new and improved Bistro Bisou is where you should go.  Additionally, by being hands-on Chef Victor was able to cut expenses and pass on the savings to the customers.  The ambiance is perfect for a quick executive lunch, or a romantic evening.  They also cater and take group reservations.  Bistro Bisou is located at 9519 South Dixie Hwy, in the corner of Dadeland Plaza Mall.  For reservations call 786-268-0178.  Bistro Bisou is open for lunch and dinner with the exception of Sundays where they are open for dinner only.
